Sharing Good Recipes: Peanut Butter & Chocolate Chip Muffins

Peanut Butter & Chocolate Chip Muffins

This is one of the my favorite recipes I have made lately.  I had a surplus of peanut butter in my pantry and was looking for a good recipe to incorporate some of that peanut butter.  I came across this recipe and I thought it seemed simple enough and tasty as well.  But I had to tweek it just a little bit.  Here's the recipe I used and turned out beautifully:

2 cups all-purpose flour
1/2 cup sugar
1 tbsp. baking powder
1/2 tsp. salt
1 cup peanut butter
1/2 cup semi-sweet chocolate chips
3 tbsp. butter divided
2 eggs
1 cup milk

Preheat oven to 400 degrees. Use paper liners or spray muffin pan with Pam.
Combine flour, sugar, baking powder, and salt.  Cut in peanut butter and 2 tbsp. of butter until mixture resembles coarse crumbles.  Beat eggs and milk; stir into dry ingredents just until moistened.  Finally, stir in chocolate chips.  Fill muffin pan 2/3 full and bake for 15-17 minutes.

Optional: Melt remaining butter and brush muffin tops.  Sprinkle with cinnamon and sugar.
