Sharing Good Recipes: Mexican Casserole

This is the first post of a weekly series called "Sharing Good Recipes."  Each week will feature one or two recipes shared by family, friends, and readers.  As a mom of three boys, I'm always looking for recipes that are fast and not too hard to make. These recipes will be simple but delicious. It seems sometimes I get in a groove of making the same few dishes every week, and I thought my family would like to try something different.

Yesterday I shopped at Bi-Lo and came home and worked in the kitchen in the afternoon.  Bi-Lo has their beef chuck roast of sale this week for $1.99/lb. so I had the butcher grind two roasts. (I'll post more about my Bi-Lo deals later today.)  When I got home I had to separate the ground beef, put into Ziploc 1 lb. packages, and pop them in the freezer. I also made some chicken burritos to freeze and eat at a later date.  Then, I started on last night's meal: Mexican Casserole.

This recipe was sent to me by my husband's Aunt Linda in Alabama.  It was very easy to make and tasted really good.  Here's a quote from my son, Casey: "This is the best casserole I've ever ate. The cheese is sooo good!" Straight out of the mouth of babes. You know it's gotta be good!

Mexican Casserole
1 lb. ground beef
1 can rotel
1 can cheddar cheese soup
2 cans cream of chicken soup
1 can red kidney beans (drained and rinsed)
1 package taco seasoning
1 bag of nacho cheese doritos
8 oz. shredded cheese
Cook meat ( I add onion to it). When it is done add taco seasoning as directed on package. In large bowl mix all soups , rotel, and red beans together, mix in meat mixture and stir well. In a large, deep, casserole dish put a light layer of crushed doritos in bottom, add half of mixture on top of doritos, put half of shredded cheese on top of mixture. repeat doritos, mixture and cheese. Bake on 350* for 30 minutes. Let rest 10 minutes before serving. (I also topped with fresh tomatoes from the garden.)
